Bulgarian fried dough — a yogurt-enriched batter dropped into hot oil, puffed and golden, eaten hot with jam, honey or crumbled sirene.

Ingredients

  • 500 g plain flour
  • 250 g plain yogurt
  • 2 pieces eggs
  • 7 g dry yeast
  • 1 tbsp sugar
  • 1 tsp salt
  • 100 ml warm water
  • 700 ml sunflower oil, for frying

    Dissolve the yeast and sugar in the warm water and leave 10 minutes until foaming.

    Beat the eggs into the yogurt, then combine with the yeast mixture.

    Work in the flour and salt to a soft, slightly sticky dough. Knead 5 minutes.

    Cover and leave in a warm place for 1 hour, until doubled.

    Heat the oil to 175C in a deep pan.

    With oiled hands, tear off a ball of dough, flatten and stretch it thin in the middle, and lower it into the oil.

    Fry 1-2 minutes per side until deep gold and puffed. Drain on paper and serve immediately.
