Steps
Steps
- 1Make the syrup first: bring the honey, the sugar for the syrup, the water, cinnamon stick and orange peel to the boil, skim, simmer for 5 minutes and leave to cool completely, then lift out the cinnamon and peel.
- 2Heat the oven to 180°C and line two baking trays with baking paper.
- 3Whisk the oil with the sugar, orange juice, orange zest and brandy, then whisk in the bicarbonate of soda, which makes the mixture foam.
- 4Mix the flour, semolina, baking powder, 1 tsp of the ground cinnamon and the cloves, add them to the wet mixture and mix gently just until you have a soft, oily dough — overworking makes the oil separate and the cookies tough.
- 5Shape into ovals of about 30 g and press the tops lightly with a fork.
- 6Bake for 20–25 minutes, until deep golden.
- 7While they are still hot, drop 4–5 at a time into the cold syrup for 1 minute, turning once, and lift them onto a rack with a slotted spoon.
- 8Mix the walnuts with the remaining ground cinnamon and sprinkle over the cookies while they are sticky.
- 9Keep them in a tin at room temperature; they are better after a day and last for two weeks.
