  • 4 pieces tomatoes
  • 1 pieces onion, diced
  • 5 pieces eggs
  • 150 g Bulgarian sirene, crumbled
  • 3 tbsp sunflower oil
  • 3 tbsp parsley, chopped
  • 0.5 tsp black pepper

    Roast the peppers over a flame or under the grill until blackened. Seal in a bowl 10 minutes, then peel, seed and tear into strips.

    Grate the tomatoes on a box grater, discarding the skins.

    Soften the onion in the oil until translucent.

    Add the tomato and cook 10 minutes until most of the liquid has gone — this is the step people rush and regret.

    Stir in the pepper strips and heat through.

    Beat the eggs lightly and pour them in, stirring gently until just set — soft curds, not scrambled dry.

    Take off the heat, fold through the sirene and parsley, and season with pepper. The cheese brings the salt.
