Steps
Steps
- 1Mix the miso, sesame paste, garlic, ginger, soy sauce and mirin into a smooth paste — this base seasons each bowl.
- 2Heat the oil in a wok over high heat and stir-fry the minced pork for 3 minutes, until browned and crumbly.
- 3Add the cabbage and bean sprouts and stir-fry for 1–2 minutes; they should stay crunchy, and the wok's smoky edge is part of Sapporo ramen.
- 4Pour the stock into the wok, add the sweetcorn, bring to a simmer and keep it hot.
- 5Cook the noodles according to the packet and drain them hard.
- 6Put a quarter of the miso base into each warmed bowl and whisk in a ladle of the hot broth until smooth — miso boiled in the pot loses its aroma, which is why it goes into the bowl.
- 7Add the noodles, then ladle over the rest of the broth with the pork and vegetables.
- 8Top each bowl with a pat of butter and the spring onions and serve at once, while the butter melts into the broth.
