Bulgarian Rice Pudding
The Bulgarian childhood dessert — short-grain rice simmered slowly in whole milk with sugar and vanilla, chilled in bowls and dusted with cinnamon. Low heat and steady stirring make it creamy rather than gluey.

Steps
Steps
- 1Rinse the rice briefly in a sieve under cold water.
- 2Put the rice in a heavy-based pan with 200 ml water and the salt, bring to the boil and simmer on low heat for 8–10 minutes, until the water is absorbed.
- 3Pour in the milk and bring it just to the boil over medium heat, stirring so it does not catch.
- 4Lower the heat to a bare simmer and cook for 25–30 minutes, stirring every couple of minutes and scraping the bottom, until the rice is completely soft and the milk has thickened to the consistency of thin cream.
- 5Add the sugar and stir for 5 minutes more until dissolved — added at the end, it does not scorch on the bottom of the pan.
- 6Take off the heat and stir in the vanilla. It looks runny at this point but thickens a lot as it cools.
- 7Ladle into bowls, leave to cool, then refrigerate for at least 2 hours.
- 8Dust with cinnamon just before serving.
