Steps
Steps
- 1Rinse the mussels in cold water, pull off the beards, and discard any with broken shells or that stay open when tapped.
- 2Melt the butter in a large, wide pan with a tight-fitting lid over medium heat and soften the shallots and garlic for 3 minutes without colouring.
- 3Add the thyme, bay and wine, raise the heat and boil for 2 minutes.
- 4Tip in the mussels, cover and cook over high heat for 4–5 minutes, shaking the pan or stirring once, until the shells have opened.
- 5Discard any mussels that stay shut. Grind over black pepper and scatter with the parsley — no salt is needed, the mussels bring their own.
- 6Ladle into deep bowls with plenty of broth, leaving the last spoonfuls, where any grit settles, in the pan, and serve with the baguette for dipping.
