Steps

  1. 1
Pour the wine into a wide stainless-steel or enamel pot and add the orange slices, cinnamon sticks, cloves and star anise.
  2. 2
Warm over medium-low heat for 10–15 minutes, until the wine steams and small bubbles appear at the edge, about 70–75°C.
  3. 3
Never let it boil: above 80°C the alcohol cooks off and the cloves and orange pith turn the wine bitter.
  4. 4
Stir in the honey until dissolved, then turn the heat to its lowest setting and leave to infuse for 10 minutes.
  5. 5
Taste and add a little more honey if the wine is sharp; dry wines need more than fruity ones.
  6. 6
Ladle through a small strainer into heatproof glasses or mugs and garnish each with an orange slice from the pot.
