Steps

  1. 1
Mix the flour, yeast, sugar, salt and baking powder, add the yoghurt, warm milk and oil and mix into a soft, sticky dough.
  2. 2
Knead on a lightly oiled surface for 8–10 minutes until smooth and elastic; it should stay soft. Cover and leave in a warm place for about 1 hour 30 minutes until doubled.
  3. 3
Divide the dough into 8 balls, cover and rest for 10 minutes.
  4. 4
Heat a heavy cast-iron pan over high heat for 5 minutes until very hot. Meanwhile stir the garlic into the melted butter.
  5. 5
Roll each ball into a teardrop shape about 5 mm thick, scatter with a few nigella seeds and press them in.
  6. 6
Lay a naan in the dry pan. After about 1 minute, when bubbles rise and the underside is spotted brown, turn it and cook for 1 minute more, pressing the puffed parts with a spatula so they char.
  7. 7
Brush at once with the garlic butter and keep warm wrapped in a tea towel while you cook the rest.
