A vibrant green spring soup made from fresh nettles – a medicinal, seasonal Easter tradition from the Bulgarian countryside.

  • 400 g nettles (blanched)
  • 2 pcs onion
  • 3 cloves garlic
  • 30 g butter
  • 2 tbsp flour
  • 200 g yoghurt
  • 2 pcs eggs
  • to taste salt

    Blanch nettles 2 minutes; drain and chop.

    Sweat onion and garlic in butter.

    Add flour; stir and cook 1 minute.
