Steps
Steps
- 1Boil the potatoes in their skins for 20 minutes until tender, and hard-boil the eggs for 9 minutes. Let both cool completely, then peel them.
- 2Dice the potatoes and eggs into 1 cm cubes, the same size as the cucumbers, radishes and ham — an even dice is what lets you eat okroshka with a spoon.
- 3Put the spring onions in a large bowl with a pinch of salt and crush them with a spoon until they release their juice; it seasons the whole soup.
- 4Add the potatoes, eggs, cucumbers, radishes, ham and most of the dill and mix gently.
- 5Whisk the kefir with the sparkling water, mustard and lemon juice and season with salt and pepper.
- 6Pour it over the vegetables, stir and chill for at least 30 minutes.
- 7Serve in chilled bowls with the remaining dill on top.
