Steps
Steps
- 1Beat the eggs with the milk and pepper using a fork, just until the yolks and whites are combined; don't whisk to a froth.
- 2Melt the butter in a 24 cm non-stick frying pan over medium heat until it foams.
- 3Pour in the eggs and, as the edges set, draw them towards the centre with a spatula and tilt the pan so the raw egg runs underneath.
- 4While the top is still slightly wet, scatter the sirene and parsley over one half.
- 5Fold the omelette over the filling and cook for 30 seconds more so the cheese warms through.
- 6Slide onto a plate, cut in two and serve straight away with the sliced tomato.
