Steps

  1. 1
Rinse the rice in several changes of water until it runs almost clear and drain it for 15 minutes. Bring it to the boil with the measured water, cover, cook for 12 minutes on the lowest heat and rest for 10 minutes off the heat.
  2. 2
Rub the salmon with 1 tsp of the salt and leave it for 15 minutes, then grill or pan-fry it for 4 minutes on each side until cooked through. Flake it, discarding the skin and bones, and mix it with the sesame seeds.
  3. 3
Spread the rice out in a bowl and let it cool until you can handle it but it is still warm; cold rice will not hold together.
  4. 4
Wet your hands, rub a pinch of the remaining salt over your palms and take about 80 g of rice.
  5. 5
Make a hollow in the rice, put a spoonful of salmon in it, close the rice over and press it into a triangle with three or four gentle squeezes: firm enough to hold, loose enough that the grains stay distinct.
  6. 6
Wrap a strip of nori round the base just before eating so it stays crisp, or ahead of time if you like it soft.
