Steps

  1. 1
Scrub the oranges and put them whole in a large pan with the water. Cover and simmer for 2 hours, until a fork slides easily through the skin.
  2. 2
Lift out the oranges and leave them to cool. Measure the cooking liquid: you need 1.7 litres, so top up with water or boil it down.
  3. 3
Halve the oranges and scoop the pulp and pips back into the liquid. Simmer for 10 minutes, then strain, pressing hard on the pulp: the pips and pith hold the pectin that sets the marmalade.
  4. 4
Cut the peel into thin or thick shreds, as you like it, and add it to the strained liquid with the lemon juice and sugar.
  5. 5
Stir over low heat until the sugar has fully dissolved, then boil hard for 15–20 minutes. Meanwhile, put a few saucers in the freezer.
  6. 6
Test for a set: a little on a cold saucer should wrinkle when pushed with a finger after a minute, at 104–105°C. If not, boil for 5 minutes more and test again.
  7. 7
Take off the heat, skim, and leave for 15 minutes so the peel stays evenly suspended. Ladle into hot sterilised jars and seal.
