Oshav is the Bulgarian Christmas Eve compote of dried plums, apples, pears and apricots, simmered with a little sugar for a table that carries an odd number of meatless dishes. An overnight soak plumps the fruit, so a short simmer is enough.

Ingredients

Serves:8
  • 150 g prunes (dried plums)
  • 100 g dried apples
  • 100 g dried pears
  • 100 g dried apricots
  • 2.5 l water

Steps

  1. 1
Rinse the dried fruit well in warm water, put it in a large bowl, cover with the 2.5 l cold water and leave to soak overnight, or for at least 4 hours.
  2. 2
Tip the fruit and its soaking water into a large pot — the water is already amber and sweet, and it is part of the oshav.
  3. 3
Add the cinnamon stick and cloves and bring slowly to the boil over medium heat.
  4. 4
Lower the heat and simmer gently for 15–20 minutes without stirring, until the apples and pears are tender but still hold their shape; a hard boil breaks the fruit up and clouds the liquid.
  5. 5
Taste first, then stir in the sugar until it dissolves — the prunes and apricots may already make it sweet enough, so add less if so.
  6. 6
Take off the heat, cover and leave to cool completely; the flavour deepens as it stands.
  7. 7
Remove the cinnamon and cloves and serve the oshav at room temperature or chilled, fruit and liquid together, in bowls or glasses.
