  • 2 kg whole lamb leg or side
  • 6 cloves garlic
  • 3 sprigs rosemary
  • 4 tbsp olive oil
  • 2 tbsp lemon juice
  • to taste salt and pepper
  • 200 ml water

Steps

    Score the lamb and insert garlic slivers and rosemary sprigs.

    Rub all over with olive oil, lemon juice, salt and pepper.

    Place in a deep roasting pan with the water, cover tightly with foil.

    Roast at 160°C for 3 hours.

    Uncover and roast at 200°C for a further 30 minutes to brown.

    Rest 20 minutes before carving.
