- 6 cloves garlic
- 3 sprigs rosemary
- 4 tbsp olive oil
- 2 tbsp lemon juice
- to taste salt and pepper
- 200 ml water

Steps
- 1Score the lamb and insert garlic slivers and rosemary sprigs.
- 2Rub all over with olive oil, lemon juice, salt and pepper.
- 3Place in a deep roasting pan with the water, cover tightly with foil.
- 4Roast at 160°C for 3 hours.
- 5Uncover and roast at 200°C for a further 30 minutes to brown.
- 6Rest 20 minutes before carving.
