Steps
Steps
- 1Put the dashi, soy sauce, mirin and sugar in a small frying pan, ideally 20 cm across, bring to a simmer and add the onion. Cook for 3 minutes until it softens.
- 2Add the chicken in one layer and simmer for 5–6 minutes, turning once, until cooked through.
- 3Beat the eggs lightly with chopsticks, just ten strokes, so streaks of white and yolk remain.
- 4Pour two-thirds of the egg evenly over the chicken, cover and cook over medium heat for 1 minute until it is just setting.
- 5Pour in the rest of the egg, cover, turn off the heat and leave for 30–60 seconds. This second pour stays soft and runny, which is the texture you want.
- 6Divide the hot rice between two deep bowls, slide half the chicken and egg with its broth over each, and scatter with the spring onion.
