  • 500 ml milk
  • 3 pieces eggs
  • 100 ml sparkling water
  • 2 tbsp sugar
  • 0.5 tsp salt
  • 3 tbsp sunflower oil
  • 30 g butter, for the pan

    Whisk the eggs with the sugar and salt, then whisk in the milk.

    Add the flour gradually, whisking to a smooth batter with no lumps.

    Whisk in the oil and the sparkling water, then rest the batter 30 minutes — resting is what makes them tender rather than rubbery.

    Heat a 24 cm pan over medium heat and wipe it with butter.

    Pour in a small ladle of batter and swirl immediately to coat the base thinly.

    Cook about 1 minute until the edges lift and the underside is lace-patterned, then flip and give it 30 seconds.
