Steps

  1. 1
Cut a 1 cm lid from the stem end of each tomato and set the lids aside. Scoop out the pulp with a teaspoon, leaving a wall about 5 mm thick, and chop the pulp.
  2. 2
Sprinkle the insides of the tomatoes with 1 tsp of the salt and the sugar and turn them upside down on a rack to drain for 15 minutes.
  3. 3
Heat 3 tbsp of the oil in a pan over medium heat and fry the onion for 5 minutes, then add the mince and cook for 6–7 minutes, breaking it up, until it loses its pink colour.
  4. 4
Add the rice and stir for 2 minutes, then take off the heat and stir in the paprika, pepper and mint.
  5. 5
Add half the chopped tomato pulp and the remaining salt and simmer for 5 minutes, until the liquid is mostly absorbed — the rice should be only half-cooked, as it finishes inside the tomatoes. Stir in the parsley.
  6. 6
Heat the oven to 180°C. Fill the tomatoes three-quarters full, because the rice swells, and put the lids back on.
  7. 7
Stand them snugly in a baking dish, spoon the rest of the pulp around them with the hot water and drizzle with the remaining oil.
  8. 8
Bake for 50–60 minutes, until the tomatoes are soft and wrinkled, the rice is tender and the liquid has reduced to a thick sauce. Rest for 10 minutes before serving.
