Steps

  1. 1
Cut the aubergines in half lengthways and scoop out the flesh with a spoon, leaving a 1 cm wall. Chop the scooped flesh.
  2. 2
Sprinkle the halves and the chopped flesh with 1 tsp of the salt and leave for 20 minutes, then rinse and pat dry — this draws out bitterness and stops them soaking up oil.
  3. 3
Heat 4 tbsp of the oil in a wide frying pan over medium heat and fry the halves cut side down for 4–5 minutes until golden and softened; arrange them in a baking dish.
  4. 4
Heat the oven to 190°C. Fry the onion in the remaining oil for 5 minutes, add the mince and cook over high heat for 8 minutes, breaking it up, until it loses its pink colour and starts to brown.
  5. 5
Add the chopped aubergine flesh and the garlic and cook for 5 minutes, then the tomatoes, paprika, pepper and remaining salt, and simmer for 5 minutes until the filling is moist but not runny.
  6. 6
Stir in the parsley and spoon the filling into the aubergine halves, mounding it slightly.
  7. 7
Pour the hot water into the dish around the aubergines and bake for 25 minutes.
  8. 8
Sprinkle the kashkaval over the top and bake for 10 minutes more, until melted and golden. Rest for 10 minutes before serving.
