Steps

  1. 1
Cut the courgettes in half crosswise and hollow out each half from the cut end with a teaspoon or apple corer, leaving the bottom closed and walls about 5 mm thick. Chop the scooped-out flesh.
  2. 2
Heat 2 tbsp of the oil in a frying pan over medium heat and fry the onion for 5 minutes until soft, then add the mince and cook for 5 minutes, breaking it up, until it loses its pink colour.
  3. 3
Add the rice and the chopped courgette flesh and stir for 2 minutes, then take off the heat and stir in the paprika, savory, pepper, 1 tsp salt and the parsley.
  4. 4
Heat the oven to 190°C. Fill the courgettes loosely to about 1 cm below the rim — the rice swells as it cooks, and packed filling splits the courgettes or stays hard in the centre.
  5. 5
Stand or lay them snugly in a baking dish. Mix the tomatoes with the hot water, the remaining oil and remaining salt and pour around the courgettes so it comes halfway up.
  6. 6
Cover with foil and bake for 40 minutes, then uncover and bake for 15–20 minutes more, until the courgettes are soft when pierced and the rice is tender.
  7. 7
For the topping, whisk the yoghurt and eggs with a pinch of salt, pour over the courgettes and bake for another 10–12 minutes until set and golden in patches.
  8. 8
Rest for 10 minutes before serving so the filling firms up.
