Steps
Steps
- 1Heat the oven to 200°C and line a baking tray with baking paper.
- 2Bring the milk, water, oil and salt to the boil in a saucepan.
- 3Pour it at once over the tapioca starch in a bowl and stir hard with a wooden spoon into a sticky, lumpy dough. Scalding the starch is what makes the bread chewy.
- 4Leave for 10–15 minutes until warm rather than hot, so the eggs don't scramble.
- 5Beat in the eggs one at a time — the dough looks broken at first, then comes back smooth and sticky — and then both cheeses.
- 6With oiled hands or two spoons, shape walnut-sized balls of about 25 g and set them 4 cm apart on the tray.
- 7Bake for 20–25 minutes, until puffed and golden at the tips. Don't open the oven in the first 15 minutes or they collapse.
- 8Serve warm.
