Romania's best-loved dessert — fried doughnuts of fresh curd cheese, each a ring crowned with a small ball, served hot with sour cream and sour cherry jam. A dry, crumbly cheese needs little flour, and little flour means tender doughnuts.

Steps

  1. 1
If the cheese is wet, hang it in a cloth for 30 minutes, then press it through a sieve or mash it with a fork until no large lumps remain.
  2. 2
Mix the cheese with the eggs, sugar, lemon zest, vanilla, salt and bicarbonate of soda.
  3. 3
Add the flour gradually and mix into a soft, slightly sticky dough, using only as much as it needs to hold together — too much flour makes them dense.
  4. 4
Divide into 6 portions and pinch a piece the size of a walnut off each. With floured hands, flatten each large piece into a disc 2 cm thick, poke a hole in the centre and widen it into a ring; roll the small pieces into balls.
  5. 5
Heat the oil in a deep pan to 160–170°C — cooler than for ordinary doughnuts, so the centre cooks through before the outside darkens.
  6. 6
Fry the rings for 3–4 minutes on each side and the balls for 2–3 minutes, until deep golden, and drain on kitchen paper.
  7. 7
Serve hot: set a ring on each plate, spoon sour cream and jam over it, top with a ball and add a little more of each.
