Steps

  1. 1
Gut the fish if the fishmonger has not, rinse it and cut off the heads if you prefer. On fish longer than 15 cm, slice off the hard row of scales that runs along each side towards the tail.
  2. 2
Pat the fish completely dry, season inside and out with 1.5 tsp of the salt and leave for 10 minutes.
  3. 3
Mix the flour, cornmeal and remaining salt in a shallow dish.
  4. 4
Heat the oil, about 2 cm deep, in a deep frying pan to 180°C.
  5. 5
Roll the fish in the flour mixture, shake off the excess and fry in batches for 3–4 minutes per side, until golden and crisp; leave them alone for the first 2 minutes or the coating tears.
  6. 6
Drain on kitchen paper and keep warm, letting the oil come back to 180°C between batches.
  7. 7
Serve hot, scattered with the parsley, with the lemon wedges.
