Steps

  1. 1
Wash the peppers and dry them thoroughly — water left on them spits violently in hot oil. Prick each one near the stalk with a knife so it doesn't burst.
  2. 2
Heat the oil in a wide frying pan over medium heat and fry the peppers whole in batches, turning, for 6–8 minutes until blistered and soft all over.
  3. 3
Lift them into a bowl, cover with a plate for 10 minutes to steam, then peel off the skins, keeping the stalks on.
  4. 4
Pour off all but 3 tablespoons of the oil, add the garlic and cook for 30 seconds without letting it colour, then add the grated tomatoes, sugar, salt and pepper.
  5. 5
Simmer the sauce for 15–20 minutes, stirring now and then, until thick and no longer watery.
  6. 6
Lay the peppers in the sauce, spoon it over them and warm through for 3–4 minutes.
  7. 7
Stir in the parsley and serve warm or cold, with the bread.
