Steps
Steps
- 1Cut the potatoes into sticks about 1 cm thick and soak them in cold water for 30 minutes to wash off the surface starch.
- 2Drain and dry them thoroughly on a clean towel — wet potatoes spit and never crisp.
- 3Heat the oil in a deep pan to 150°C/300°F and fry the chips in batches for 5–6 minutes, until soft but still pale. Lift out and drain.
- 4Raise the oil to 180°C/350°F and fry the chips again in batches for 2–3 minutes, until golden and crisp.
- 5Drain on kitchen paper and sprinkle with the salt while hot.
- 6Pile onto plates and grate the cold sirene finely over the top straight away, so it softens on the hot chips. Serve at once.
