The traditional Russian and Slavic Orthodox Easter dessert – a pyramid of sweetened farmer's cheese, almonds and dried fruits served after the midnight liturgy.

  • 500 g farmer cheese or ricotta
  • 100 g butter
  • 150 g icing sugar
  • 2 pcs eggs
  • 1 tsp vanilla
  • 80 g blanched almonds
  • 80 g raisins
  • 50 g candied fruit
  • 1 pc lemon zest

    Drain cheese thoroughly overnight in a cheesecloth.

    Beat softened butter with icing sugar until creamy.

    Add egg yolks and vanilla; beat until pale.

    Fold in drained cheese, almonds, raisins, candied fruit and lemon zest.

    Line a flower pot or paskha mould with damp muslin.

    Pack in the mixture, fold over muslin, weigh down and refrigerate overnight.

    Unmould to reveal the pattern; decorate with almonds and serve cold.
