Steps

  1. 1
Soak the porcini in the hot water for 15 minutes, then squeeze them out and chop; strain the soaking liquid through kitchen paper and keep it.
  2. 2
Cook the pasta in well-salted boiling water until 1 minute short of al dente and reserve a cupful of the water.
  3. 3
Meanwhile heat the oil in your widest frying pan over high heat and fry the fresh mushrooms in two batches, leaving them untouched for the first 2 minutes, then tossing, for 5–6 minutes in all until well browned. Crowded mushrooms steam and turn grey.
  4. 4
Return all the mushrooms to the pan, lower the heat to medium, add the garlic and porcini and cook for 1 minute.
  5. 5
Pour in the wine and the porcini liquid and let it bubble down by half. Season with salt and pepper.
  6. 6
Add the drained pasta, the butter and most of the parsley and toss over the heat with splashes of pasta water until glossy.
  7. 7
Off the heat, toss in half the cheese and serve with the rest and the remaining parsley.
