Steps
Steps
- 1Cook the pasta in salted boiling water until al dente and reserve a cupful of the water.
- 2Meanwhile melt the butter in a wide pan over medium heat and soften the shallot for 3 minutes.
- 3Stir in the tomato purée for 1 minute, then pour in the wine and let it bubble for 1 minute.
- 4Add the cream, bring to a simmer and cook for 2 minutes, until slightly thickened.
- 5Take the pan off the heat and stir in two-thirds of the salmon — it should only warm through and turn pale pink, not cook hard.
- 6Toss in the drained pasta with the finely grated zest of the lemon and most of the dill, loosening with pasta water. Season with pepper and only a little salt.
- 7Serve topped with the remaining salmon and dill.
