Steps
Steps
- 1Roll the pastry sheet up tightly from the short side into a log, wrap and chill for 30 minutes.
- 2Whisk the flour into 50 ml of the milk until smooth. Heat the remaining milk to a simmer, whisk in the flour paste and cook, whisking, for 1 minute until thickened. Take off the heat.
- 3Boil the sugar, water, lemon peel and cinnamon stick for 3 minutes to a light syrup (about 105°C). Remove the peel and cinnamon and pour the hot syrup into the milk in a thin stream, whisking.
- 4Leave to cool until just warm, then whisk in the yolks and strain into a jug.
- 5Heat the oven as high as it will go, ideally 250°C or more. Cut the pastry log into 12 slices about 2 cm thick.
- 6Stand each slice spiral-side up in a 12-hole muffin tin. With wet thumbs, press it out from the centre and up the sides until the pastry is thin at the base and rises just above the rim.
- 7Fill each case three-quarters full with custard. Bake on the top shelf for 12–15 minutes, until the pastry is deep brown and crisp and the custard has scorched black spots.
- 8Cool in the tin for 5 minutes, then lift out. Serve warm, dusted with ground cinnamon and icing sugar.
