A Rhodope mountain specialty — grated potato bound with onion and spearmint, pressed into a pan and baked until a crust forms on both faces.

  • 1 kg potatoes
  • 2 pieces onions, grated
  • 2 tsp dried spearmint
  • 150 g Bulgarian sirene, crumbled
  • 5 tbsp sunflower oil
  • 1.5 tsp salt
  • 0.5 tsp black pepper

    Peel and grate the potatoes coarsely, then squeeze them hard in a cloth — the drier the mixture, the better the crust.

    Mix the potato with the grated onion, spearmint, salt and pepper. Fold through the sirene.

    Heat 3 tbsp oil in a heavy pan over medium heat and press the mixture in as an even cake.

    Cook 15 minutes without touching it, until the underside is a deep crust.

    Slide it onto a plate, add the rest of the oil to the pan, and flip the cake back in uncooked side down.

    Cook another 15 minutes. Rest 5 minutes and cut into wedges.
