- 150 g Bulgarian sirene, crumbled
- 5 tbsp sunflower oil
- 1.5 tsp salt
- 0.5 tsp black pepper

- 1Peel and grate the potatoes coarsely, then squeeze them hard in a cloth — the drier the mixture, the better the crust.
- 2Mix the potato with the grated onion, spearmint, salt and pepper. Fold through the sirene.
- 3Heat 3 tbsp oil in a heavy pan over medium heat and press the mixture in as an even cake.
- 4Cook 15 minutes without touching it, until the underside is a deep crust.
- 5Slide it onto a plate, add the rest of the oil to the pan, and flip the cake back in uncooked side down.
- 6Cook another 15 minutes. Rest 5 minutes and cut into wedges.
