A Bulgarian winter roast — duck pieces browned in their own fat, then baked on sauerkraut fried in that fat with onion and paprika, so the cabbage soaks up the richness while the skin on top crisps.

  • 1 duck (about 2.5 kg), cut into 8 pieces
  • 1.2 kg sauerkraut
  • 1 large onion, chopped

Steps

  1. 1
Trim off the loose flaps of fat at the neck and cavity, prick the skin all over with a skewer without piercing the meat, and rub the pieces with the salt.
  2. 2
Put the duck skin side down in a large, cold frying pan, in two batches if needed, set it over medium-low heat and render for 15–20 minutes, until the skin is golden and the fat has run out; lift the pieces out.
  3. 3
Heat the oven to 180°C. Taste the sauerkraut and rinse it if very sour or salty, then squeeze it dry and chop it into 1 cm strips.
  4. 4
Pour off all but 4 tbsp of the duck fat and keep the rest for another dish. Fry the onion in it for 5 minutes, then add the sauerkraut and fry for 8 minutes, stirring, until it takes up the fat.
  5. 5
Off the heat, stir in the paprika and peppercorns. Spread the sauerkraut in a deep baking dish, tuck in the bay leaves and pour over the hot water.
  6. 6
Lay the duck on top, skin side up, so the skin stays above the cabbage.
  7. 7
Bake uncovered for 1 hour 30 minutes, until the meat is tender at the bone and the skin is crisp; if the cabbage dries out, add a few spoonfuls of hot water around the duck, never over it.
  8. 8
Rest for 10 minutes and serve the duck on a bed of the sauerkraut.
