Roast Potatoes with Garlic and Savory
Potato chunks parboiled, roughed up and roasted in hot oil with garlic and savory until craggy and crisp — the Sunday side for Bulgarian roast chicken and lamb. The rough edges are where the crunch comes from.

Steps
Steps
- 1Heat the oven to 220°C/425°F and put the oil in a large roasting tin to heat for 10 minutes.
- 2Cut the potatoes into 5 cm chunks, put them in a pan of cold water with half the salt, bring to the boil and simmer for 7–8 minutes, until the outsides soften but the centres are still firm.
- 3Drain, then shake the potatoes hard in the colander until the edges turn fluffy and rough — those ragged edges become the crust.
- 4Tip them carefully into the hot oil, turn to coat and sprinkle with the savory, paprika, pepper and the remaining salt.
- 5Roast for 30 minutes, turn them, add the garlic and roast for 15–20 minutes more, until deep golden and crisp all over.
- 6Squeeze the soft garlic out of its skins over the potatoes and serve hot.
