Steps

  1. 1
Dissolve the yeast and sugar in the lukewarm milk and water, then add the flour, 1 1/2 tsp of the salt and 2 tbsp of the olive oil and knead for 10 minutes into a soft, smooth dough. Cover and leave for 1 hour until doubled.
  2. 2
Meanwhile heat the remaining olive oil in a frying pan over medium-high heat and fry the beef for 5 minutes, breaking it up, until it is no longer pink.
  3. 3
Add the onion and green peppers and cook for 5 minutes, then stir in the tomatoes, tomato paste, Aleppo pepper, black pepper and the remaining salt and cook for 5 minutes more, until the liquid has evaporated. Stir in the parsley and leave to cool.
  4. 4
Heat the oven to 240°C/465°F with a baking tray inside.
  5. 5
Divide the dough into 4 and roll each piece on a lightly floured surface into a long oval about 35 × 15 cm.
  6. 6
Spread a quarter of the filling down the middle, leaving a 3 cm border, then fold the long sides over the edge of the filling and pinch and twist the ends into points to make a boat.
  7. 7
Brush the rims with the egg yolk, slide the breads on baking paper onto the hot tray and bake for 10–12 minutes, until the rims are deep golden.
  8. 8
Brush the hot crust with the melted butter, cut each pide into strips and serve at once.
