Steps

  1. 1
Season the chicken with 1 tsp of the salt. Heat the oil in a wide, heavy pan over medium-high heat and brown the chicken skin side down for 6–7 minutes, then turn it for 3 minutes; set aside.
  2. 2
Add the onions and carrots to the fat and cook over medium heat for 8 minutes, stirring, until the onion is soft.
  3. 3
Take the pan off the heat, sprinkle in the flour and paprika and stir for 30 seconds, until the flour has absorbed the fat.
  4. 4
Return to the heat, add the tomatoes and cook for 3–4 minutes, then gradually pour in the hot water, stirring so no lumps form.
  5. 5
Return the chicken, add the bay leaf, pepper and remaining salt, bring to the boil, cover and simmer for 20 minutes.
  6. 6
Add the potatoes, pushing them under the liquid, and simmer covered for 25 minutes more, until the potatoes are tender and the chicken comes away from the bone.
  7. 7
If the sauce is thin, uncover for the last 5 minutes; it should be about as thick as pouring cream.
  8. 8
Remove the bay leaf, stir in most of the parsley and serve sprinkled with the rest.
