Steps

  1. 1
Season the chicken with 1 tsp of the salt. Heat 2 tbsp of the oil in a large frying pan over medium-high heat and brown the chicken skin side down for 6–7 minutes; transfer it to a large clay pot (gyuvech) or a lidded casserole.
  2. 2
Add the remaining oil to the pan and fry the onions and carrots for 6 minutes, then the peppers and garlic for 3 minutes more.
  3. 3
Take the pan off the heat, stir in the paprika, savory and pepper, then mix in the tomatoes.
  4. 4
Scatter the potatoes and green beans around the chicken, spoon the vegetable mixture over everything, sprinkle with the remaining salt and pour in the hot water.
  5. 5
Cover the pot and put it into a cold oven, then set the oven to 180°C — a clay pot put into a hot oven can crack.
  6. 6
Bake for 1 hour 15 minutes, then stir gently and turn the chicken pieces skin side up.
  7. 7
Bake uncovered for 30 minutes more, until the potatoes are tender, the chicken comes away from the bone and the top has browned.
  8. 8
Rest for 10 minutes — the clay holds its heat, so the stew keeps bubbling — then sprinkle with the parsley and serve from the pot.
