Steps
Steps
- 1Toss the grated courgette with half a teaspoon of the salt in a sieve and leave for 10 minutes, then squeeze it hard in your hands — wet courgette makes a mixture that will not hold its shape.
- 2Heat the oven to 200°C and line a baking tray with baking paper brushed with 1 tbsp of the oil.
- 3Mix the chicken with the courgette, spring onions, dill, egg, breadcrumbs, cumin, savory, pepper and the remaining salt.
- 4Knead for 3 minutes, then cover and chill for 20 minutes — chicken mince is soft and needs the rest to firm up.
- 5With wet hands shape 16 flattened kyufteta, arrange them on the tray spaced apart and brush the tops with the remaining oil.
- 6Bake for 15 minutes, turn them over and bake for 8–10 minutes more, until golden and cooked through, with no pink in the centre.
- 7Rest for 3 minutes and serve.
