Steps
Steps
- 1Rinse the peppers and dry them completely — water makes the hot oil spit.
- 2Leave the stems on; they are the handle you eat them by.
- 3Heat the oil in a large, heavy frying pan over high heat until it shimmers.
- 4Add the peppers in a single layer, in two batches if needed, and fry for 3–5 minutes, turning often, until the skins blister and char in spots and the peppers slump slightly.
- 5Tip them onto a plate or into a small earthenware dish, oil and all.
- 6Scatter generously with flaky salt and serve at once, eaten whole by the stem.
