Steps

  1. 1
Roast the peppers, aubergine and tomatoes on a grill, over a gas flame or under the oven grill at 250°C, turning them until the skins are blackened and blistered all over — about 15 minutes for the tomatoes, 25 minutes for the peppers and 40 minutes for the aubergine.
  2. 2
Steam the peppers in a covered bowl for 10 minutes, then peel and deseed them. Peel the tomatoes and scoop the aubergine flesh out of its skin.
  3. 3
Leave the aubergine flesh and the peppers to drain in a colander for 15 minutes — the juices they release would make the pindzhur watery, and the aubergine juice is bitter too.
  4. 4
Chop everything very finely with a knife on a board, or pass it through a mincer with a coarse plate. Do not use a blender: pindzhur should be finely chopped, never a purée.
  5. 5
Crush the garlic with a pinch of salt and stir it into the vegetables.
  6. 6
Pour in the oil in a thin stream, stirring all the time, then add the vinegar and salt to taste.
  7. 7
Stir in the parsley and chill for at least 1 hour so the flavours settle. Serve cold with fresh bread or alongside grilled meat.
