Steps

  1. 1
Mix the flour, yeast and salt, add the water and 2 tbsp of the oil and knead for 8 minutes until smooth. Cover and leave to rise for 1 hour, until doubled.
  2. 2
Meanwhile heat 4 tbsp of the oil in a wide, heavy pan over medium-low heat, add the onions, garlic, thyme and bay, cover and cook for 45 minutes, stirring now and then, until very soft and pale gold.
  3. 3
Uncover and cook for 10 minutes more to drive off the liquid — wet onions make a soggy base. Remove the bay leaf and thyme stalks.
  4. 4
Heat the oven to 220°C. Oil a baking tray with the remaining oil and press the dough out on it into a rectangle about 25 × 35 cm.
  5. 5
Spread the onions evenly over the dough, leaving a 1 cm border.
  6. 6
Lay the anchovies over the top in a lattice of diamonds and put an olive in the centre of each diamond.
  7. 7
Bake for 20–25 minutes, until the crust is golden and crisp underneath.
  8. 8
Cool for 10 minutes and cut into squares; serve warm or at room temperature.
