Steps
Steps
- 1Wash the spinach and blanch it in boiling salted water for 1–2 minutes, just until wilted. Drain, cool under cold water and squeeze it dry by the handful, as hard as you can: wet spinach makes pkhali that won't hold its shape.
- 2Grind the walnuts and garlic with a pinch of salt in a food processor to an oily paste.
- 3Add the coriander leaves, ground coriander, fenugreek, chilli and vinegar and blend again.
- 4Chop the spinach finely and mix it into the walnut paste, keeping some texture. Taste for salt and vinegar, then chill for 30 minutes to firm up.
- 5Shape into balls the size of a walnut in its shell, flatten them slightly, press a dent into the top of each and fill it with pomegranate seeds.
