Steps
Steps
- 1Rinse the rice until the water runs almost clear, bring it to the boil with the water, cover, cook for 12 minutes on the lowest heat and rest for 10 minutes.
- 2Warm the rice vinegar, sugar and salt until dissolved and fold them into the hot rice with a cutting motion. Let it cool to room temperature.
- 3Soak the wakame in cold water for 5 minutes until it unfurls, then drain and squeeze it dry.
- 4Mix the soy sauce, sesame oil, red onion and half the spring onions, fold in the tuna and chill for 10 minutes; no longer, or the soy starts to cure the fish. Use only fish sold for eating raw.
- 5Divide the rice between four bowls and arrange the tuna, avocado, cucumber, wakame, edamame and ginger in sections on top.
- 6Scatter with the sesame seeds, chilli flakes and remaining spring onions and serve cold.
