Popara is the old Bulgarian breakfast of stale bread soaked in hot milk or sweet mountain tea, stirred with butter and crumbled sirene. Day-old bread is the point — fresh bread turns to paste instead of holding its pieces.

- 400 ml milk, or sweetened mountain tea

Steps
Steps
- 1Tear the stale bread into bite-sized chunks, crust and all, and divide between two deep bowls.
- 2Heat the milk (or the tea) until steaming and just starting to bubble at the edge.
- 3Pour the hot milk over the bread and press the pieces down with a spoon so they all soak.
- 4Leave for 1–2 minutes, until the bread is soft but still in pieces.
- 5Add the butter in small pieces and stir gently so it melts into the milk.
- 6Scatter the crumbled sirene on top, add the sugar if you like it sweet-and-salty, and eat straight away with a spoon.
