Steps
Steps
- 1For a nuttier flavour, toast the oats in a small heavy pan over medium heat for 2 minutes, stirring, until they smell of biscuits.
- 2Add the milk, water and salt and bring to a simmer, stirring.
- 3Lower the heat and cook for 5–8 minutes, stirring often, until thick and creamy and the oats are tender. Stirring releases the starch and makes the porridge silky.
- 4Take it off the heat and leave for 1 minute; it thickens further as it stands. Loosen with a splash of milk if you like it softer.
- 5Taste and add a little more salt if needed: salt is what makes porridge taste of oats rather than paste.
- 6Spoon into warm bowls, top with the berries and drizzle with the honey.
