Greek orange cake made with dried, crumbled filo instead of flour — the pastry soaks up a yoghurt and orange-zest batter, bakes into a moist, open crumb and is drowned in orange syrup. Drying the filo first is the whole trick.

  • 450 g filo pastry sheets
  • 300 g sugar, for the syrup
  • 200 ml water
  • 250 ml orange juice
  • 1 cinnamon stick
  • 10 g butter, for the dish
  • 4 eggs
  • 150 g sugar
  • 250 g Greek yoghurt
  • 200 ml sunflower oil
  • 2 tsp orange zest, finely grated
  • 1 tsp vanilla extract
  • 15 g baking powder

Steps

  1. 1
Unfold the filo sheets, tear them roughly and spread them out on trays. Leave to dry at room temperature for several hours, or in a 120°C oven for 15–20 minutes, until brittle but not coloured.
  2. 2
Boil the sugar for the syrup with the water, orange juice and cinnamon stick for 5 minutes, then leave to cool completely.
  3. 3
Heat the oven to 180°C and butter a 23 x 33 cm dish.
  4. 4
Beat the eggs and sugar for 3 minutes, then beat in the yoghurt, oil, orange zest, vanilla and baking powder.
  5. 5
Crumble the dried filo into small pieces over the batter a handful at a time, folding until every piece is coated, and leave for 5 minutes so the pastry softens.
  6. 6
Spread the mixture in the dish and bake for 40–45 minutes, until golden and a skewer comes out clean.
  7. 7
Lift the cinnamon stick out of the syrup and pour the cold syrup slowly over the hot cake.
  8. 8
Leave for at least 2 hours to absorb before cutting into squares.
