Steps

  1. 1
Drain the soaked beans, cover with cold water and bring to the boil, then drain, cover with fresh hot water and simmer on low heat for 60–90 minutes until completely soft; salt only at the end, as salt added early keeps the skins tough.
  2. 2
Meanwhile, rinse the dried peppers, cut a lid around each stem, shake out the seeds and soak them in hot water for 20–30 minutes until pliable.
  3. 3
Drain the beans, keeping 300 ml of the cooking water, and mash them roughly with a fork, leaving some whole.
  4. 4
Fry the onion in the oil over medium heat for 8 minutes until golden, then take off the heat and stir in the paprika.
  5. 5
Mix the onion into the beans with the mint, savory, salt and pepper; the filling should be soft but hold its shape.
  6. 6
Heat the oven to 180°C. Drain the peppers and fill each one with the bean mixture, pressing it in with a teaspoon without splitting the skins.
  7. 7
Arrange them openings up in a clay or ovenproof dish and pour in the reserved bean water.
  8. 8
Bake for 40–45 minutes, until the peppers are soft and lightly browned on top; serve warm or at room temperature.
