Lenten sarmi for Christmas Eve (Badni vecher) — sauerkraut leaves rolled around rice, onion, paprika and dried mint, cooked for a table that must carry an odd number of meatless dishes. Slow simmering under a plate keeps the rolls tight.

Steps

  1. 1
Rinse the sauerkraut leaves if they are very salty, cut the thick rib out of each and halve any very large leaves.
  2. 2
Fry the onion in the oil over medium heat for 6–8 minutes until soft and golden.
  3. 3
Add the rice and stir for 2 minutes until the grains turn translucent at the edges, then take off the heat and stir in the paprika, mint, savory and pepper — over direct heat paprika burns and turns bitter.
  4. 4
Put a heaped teaspoon of filling at the base of each leaf, fold in the sides and roll up firmly but not too tight — the rice doubles as it cooks.
  5. 5
Line a heavy pot with torn leaves and pack the rolls in seam-side down in tight layers.
  6. 6
Pour over the sauerkraut juice and enough hot water to just cover, and weigh the rolls down with an upturned heatproof plate.
  7. 7
Bring to a simmer, cover and cook on the lowest heat for about 1 hour, until the rice is soft and the liquid is mostly absorbed.
  8. 8
Rest off the heat for 15 minutes and serve warm or at room temperature.
