Steps
Steps
- 1Rinse the sliced leeks thoroughly to wash out any grit hidden between the layers, and drain well.
- 2Melt the butter in a heavy pot over medium-low heat, add the leeks and a pinch of salt, cover and sweat for 10–12 minutes, stirring now and then, until soft and sweet but not coloured — browned leeks make the soup grey and bitter.
- 3Add the potatoes and the hot stock, bring to the boil and simmer 20 minutes, until the potatoes break when pressed.
- 4Blend until smooth in short bursts — over-blended potato turns gluey.
- 5Stir in the cream, season with salt and white pepper and reheat gently.
- 6Serve sprinkled with the chives.
