Steps

  1. 1
A day ahead, or at least 2 hours before roasting, rub the turkey inside and out with the salt and ground pepper.
  2. 2
Heat the oven to 170°C. Taste the sauerkraut; if very salty, rinse it briefly, then squeeze it out and chop it into 1 cm strips.
  3. 3
Heat 4 tbsp of the oil in a large pan and fry the onions for 6 minutes, then add the sauerkraut and fry for 10 minutes, stirring, until it softens and takes up the oil.
  4. 4
Off the heat, stir in the paprika, peppercorns and allspice. Spread the sauerkraut in a large, deep roasting tin, tuck in the bay leaves and pour over the wine and hot water.
  5. 5
Brush the turkey with the remaining oil, set it breast side up on the sauerkraut and cover the tin tightly with foil.
  6. 6
Roast for 2 hours 30 minutes — under the foil the bird steams over the cabbage and stays moist.
  7. 7
Remove the foil, raise the heat to 200°C and roast for 40–50 minutes more, basting twice with the tin juices, until the skin is deep golden and the thickest part of the thigh reaches 75°C (the juices run clear).
  8. 8
Rest the turkey for 20 minutes under loose foil, meanwhile stirring the sauerkraut through the juices in the tin.
  9. 9
Carve and serve the meat on the sauerkraut.
