Steps
Steps
- 1Toss the grated cheese with the cornflour in a bowl. The starch coats the cheese and stops the sauce splitting or turning grainy.
- 2Melt the butter in a saucepan over medium heat and soften the onion and jalapeño for 4–5 minutes. Add the cumin and stir for 30 seconds.
- 3Pour in the evaporated milk and bring it to a gentle simmer.
- 4Lower the heat and add the cheese a handful at a time, stirring until each addition melts before adding the next. Never let it boil.
- 5Stir in the tomato, take the pan off the heat and scatter with the coriander.
- 6Serve hot with the tortilla chips, keeping the queso warm over the lowest heat and stirring now and then, as it sets when it cools.
