Steps
Steps
- 1Coarsely grate the cucumber, salt it lightly, leave for 5 minutes and squeeze it hard in your hands. Otherwise the raita turns watery.
- 2Toast the cumin seeds in a dry pan over medium heat for 1–2 minutes until a shade darker and fragrant, then crush them coarsely in a mortar.
- 3Whisk the yoghurt until smooth; if it is very thick, loosen it with 1–2 tbsp cold water.
- 4Stir in the cucumber, most of the cumin and the mint, and season with salt.
- 5Keep chilled until serving. Sprinkle with the remaining cumin and a pinch of chilli powder and serve cold with biryani, curries or tandoori meat.
